I am always on the look our for dinner ideas. I have a pound of shrimp in the freezer I wanted to use so I searched for a recipe that is exciting enough but not too hard to prepare. Salt and Pepper shrimp stood out from all the recipes I read. We always order salt and pepper silverfish everytime we dine at our favorite Chinese restaurant so this would be perfect.

To make, clean shrimp by trimming the head and claws/legs with kitchen shears. Pat dry with paper towels and set aside.

Measure 2 tbsp of whole peppercorns and roast it on a pan until fragrant, set aside to cool before grinding. Then take 1 tbsp. sea salt and let this roast too for a few minutes and grind before combining it with the pepper.

Take your shrimp and lightly coat with cornstarch. Heat up a small pan with enough oil about 1/4 cup and fry your shrimp in batches. Fry for 1-2 minutes until shrimp is crispy and has turned color. Drain on paper towels. Sprinkle with a bit of your salt and pepper mixture.

Take another pan and brown 2 cloves of minced garlic in a about 2 tbsp oil. When done let this drain on paper towels. Wipe your pan to remove excess oil. Heat and lightly fry some thinly sliced long green peppers. Then add your fried shrimp and garlic. Toss until everything is well combined. You may add some more of your salt and pepper mixture, lightly stir for a few seconds and serve.
