Sarciado for me is defined as a dish cooked in tomato sauce. I usually make either beef or chicken sarciado but have never tried making it with just eggs. I looked through different recipes for this dish and tried to get ideas from each.

Aside from the eggs, you will need onions, garlic, tomatoes, potatoes, carrots and bell peppers. I used tomato paste, laurel leaf, salt and pepper as seasoning. Note: mushrooms, sweet potatoes or zucchini are also good additions to this dish.

First, make hard boiled eggs. I used 8 pieces for this recipe. Once cooked, peel and set aside. Saute your onions, garlic and tomatoes until vegetables are softened around 5 -8 minutes. Add 2 cups water, a piece of laurel leaf and 2-3 tablespoons tomato paste. Season with salt and pepper. Let it simmer for about 5 minutes then add your diced carrots and potatoes. Once your root vegetables are tender add your bell pepper and hard boiled eggs. Let it simmer for a few minutes till the eggs are heated through and the flavors are absorbed. Serve with rice or some type of crusty bread.
