This is a great dinner idea for meatless Friday nights in keeping with the Lenten tradition. I just made use of canned salmon which I have on hand.

To make drain and flake 1 (14.75 oz) and 1 (5 oz) can of salmon. Make sure to remove any fishbones. To this add 1 medium finely minced onion, 2 stalks chopped green onion, 1/4 cup chopped parsley, 1 egg, 1 tsp. salt, 1 tsp. pepper, zest and juice of one lemon and 1/4 – 1/2 cup breadcrumbs. Mix everything together and form it into four large patties. Coat each patty with breadcrumbs and let it sit for a bit to set.

Meanwhile heat a large skillet with about 1/2 cup oil. Then gently place your patty in the hot oil and cook until brown. Cook each side for approximately 3-4 minutes.

I served this with steamed Chinese spinach and lemon slices.
