One of the easiest recipes for fish that my mom taught me. This dish has a very light and delicate flavor and good for those who are trying to eat healthy. This is also the first seafood/fish dish that I gave my girls as babies (boneless of course).

Ask your fish monger to cut your whole tilapia into steaks, in my case I had him cut it into three pieces. I suggest using bone in fish for this recipes to create a flavorful broth.

Pour 5-6 cups of water into your pot. Add a medium sized chopped onion, a thumb size ginger slivers, 1 tsp. whole peppercorns. Let this come to a boil. Then carefully add in your fish, season with 1-2 tsp. kosher salt (some prefer to use fish sauce) and cover. Once it comes back to a boil lower the heat and add in some some sliced bottled gourd (you want it just at a simmer). Cover and continue cooking until fish is done. Add several bunches of baby bok choy and continue cooking for 1-2 minutes then remove from heat.

We eat this with rice and a dipping sauce of lemon and soy or lemon and fish sauce.
